This has long been one of the favorites at openings and meals here. The recipe comes from the incomparable Joan Leopold.
1 cup of oatmeal
1 3/4 cup of boiling water
1 stick of butter or margarine
1 cup of brown sugar
1 cup of white sugar
Sift the following
1 3/4 cup of flour
1 tsp. of baking soda
1/2 tsp. of salt
2 tbsp. Of unsweetened cocoa
1 12 oz. bag of chocolate chips
Mix oatmeal, water and butter. Let stand for ten minutes
In blender add sugars, eggs and dry ingredients.
Beat in chips.
Pour mixture into a 13 x 9 greased baking tin.
Bake at 350 degrees for 45 minutes.
